its weird, i tried the alton brown brine and the dry brine. Alton brown apparently saw the dry brine thing and revised his recipe recommendation to be a dry brine. but something must be funky because i still vastly prefer the original alton brown recipe. maybe because the skin and top layer of meat does end up getting a bit of sweetness and other flavor sticking to it.

2023年11月12日 · A real turkey does not drip all that much liquid while roasting. That's one reason we brine, to prevent all that juice from coming out. US commodity turkey infuses so much that even if 2-3 cups comes out there is still a lot left so you don't notice. And at 500-350F it should reduce off as fast as the water drips leaving mostly fat.

It's the only turkey I've ever made, so I haven't tried Alton's. But one thing Kenji rightly points out about wet brining is that it floods the meat with water, which of course makes a juicy turkey easier, but dilutes the flavor. An unbrined (or dry brined) turkey has a stronger and better flavor.
