2024年11月19日 · I have smoked Turkey for many years using a maple brine. Some birds have been 34 lbs and some breast only at approx. 3 lbs. I have had great results by smoking the meat at 170 F with applied smoke and once I am happy with the smoke color we transfer the bird to the oven to complete the cook. We then monitor the internal temp and cook it to 175F.

I usually do a 14# birds and figure about 1/2 per pound to get to and IT of 165 in the thigh. I brine my turkey for 12-18 hours then let the bird air dry in the fridge for 12 hours prior to smoking.

2014年10月28日 · Jeff recommends smoking it at 240°, but others have said to do it at 325°. Being a Rec Tec owner yourself, you know that when you smoke at higher temperatures on the Rec Tec you don't get the smoke that you get at 230°. BTW...230 is my go to smoking temp, and I have to change that. My turkey is 22lbs, so the cook time will be pretty long.

2009年11月28日 · Thats the safest route. I cured a turkey a couple months ago and it turned out great, but I smoked it at 275 till done afterward. I understand wanting to add smoke flavor, but I don't think cold smoking is the way to go at all. Try curing one, it turned out really good.
