The Enet Adapter on my laptop has negotiated a GBit connection, and connected directly to the Xfinity device, I should be getting much better results.

I have my suspicions as to why. WiFi currently restricts the speed of connections to the speed of the wifi which is drastically slower than wired connection.

I think the key is installing the modem in the best possible spot in your home and confirming the modem is providing internet. After that you can set your switch up or try to the wired access point that came with your home.

If you go straight to wired you can also use pretty much any WiFi router (generally not combo cable modem + WiFi router units though) as an access point.

This class of router usually does not include WiFi so you will need a WiFi router as well. As stated above, everything must be wired with good ethernet cables.
