Put the turkey into a roasting tray ... Then, baste the meat again and lower the setting to 180C (160C fan, Gas 4) and cook for two and a half hours (adding 30 minutes per kg of weight).
Despite the best-laid plans, your turkey might still be frozen solid as Christmas day rapidly approaches. But don't panic if you're scrambling to thaw, prepare, and cook at the last minute.
