Bake the meat until its internal temperature is 5 to 10° below your desired doneness. We prefer prime rib somewhere between rare and medium-rare. That'll take somewhere between 1-3/4 and 2-1/4 hours.
Ask your butcher to French the roast and tie the rib between the bones ... and roast the meat for 12 minutes per pound for rare to medium rare, 15 minutes per pound for medium.
